Crucially their friends wanted the muffins to be super fluffy and the cheesecakes to be silky-smooth.
The introduction recommends how you can easily make your own plant-based alternatives to butter, cream and eggs, and gives great advice on using these alternative ingredients successfully. Every recipe has a photo of the finished bake, making this a very practical cookbook as well as an inspiring source of highly original recipes for vegan bakers.
Jérôme Eckmeier has been following a vegan diet for many years, and regularly conjures up inspirational new vegan dishes in his online cooking show and his blog. He has trained as a chef and food technician and worked in numerous prestigious restaurants in Germany and abroad.
Daniela Lais has been vegan for more than ten years. She worked for a long time at the long-established vegetarian/vegan restaurant Gingko, in Graz, Austria.
Together the authors also wrote DK's best-selling Vegan on the Go (2017).
